Greek Rice Pilaf

We had some great friends in Virginia that would occasionally make themed desserts or dinners with us.  Some of the most memorable were the cake night (it was a lot of cake!), Indian food night (I made chicken tikka masala), and Greek food night (I brought my husband's favorite "nirvana chicken" and tzatziki sauce).  My dear friend contributed to Greek night with a great veggie salad and this rice pilaf.  And I could not get enough of this rice!  It is perfect in its spinach, peas, and feta goodness.  It's a fabulous side dish, but I admit I've been known to eat it by the plateful and call it dinner.


Greek Rice Pilaf

Serves 6 as a side dish

Ingredients
2 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 teaspoons oregano
1/2 teaspoon dried dill
1/8 teaspoon black pepper
4 cups spinach, chopped
3 tablespoons lemon juice
4 cups cooked rice (couscous also works great)
1 cup peas, fresh or frozen
4 ounces feta, crumbled

Directions
1) In a large skillet, saute the onion in oil on medium heat until they soften and become translucent.
2) Add the garlic, oregano, dill, and pepper and saute until fragrant.
3) Stir in the spinach, lemon juice, rice and green peas.  Cover and cook for 3-4 minutes, stirring occasionally.
4) When spinach is wilted and rice is hot, top with feta and serve immediately.  Enjoy!
